for the crust: 1 cup unsalted butter 1/2 cup sugar 2 tsp vanilla 1/2 tsp salt 2 cups + 2 Tbs flour for the curd: 2 cups sugar 6 Tbs flour 6 eggs 1 cup lemon juice Crust: Mix together all crust ingredients except the flour. Then mix in the flour to make crumbs. Press the crumb crust into the bottom of a pan and cook for ~20 minutes at 190 C til light brown. Curd: Mix the sugar and flour then whisk in the eggs and lemon juice. Pour over the cooked crust and put back in the oven until the curd is set, 22-26 minutes. Let cool before cutting.
